Scope

This document specifies a method for the determination of lipophilic colorants (SUDAN I-IV) in saffron (ground or filament), using quantitative proton nuclear magnetic resonance spectroscopy (1H-qNMR). If complying with the experimental parameters described below, this test procedure has been proven for the following concentration ranges: SUDAN III: 0,14 -7,1 g/kg
Furthermore the molecules trans-crocins, cis-crocins, safranal, picrocrocin, free saccharides, kaempferol and crocetins can be determined simultaneously using this test procedure.

trans-crocins: abc mg/kg to xyz mg/kg;
cis-crocins: abc mg/kg to xyz mg/kg;
safranal: abc mg/kg to xyz mg/kg;
picrocrocin: abc mg/kg to xyz mg/kg;
crocetins: abc mg/kg to xyz mg/kg;
free saccharides: abc mg/kg to xyz mg/kg;
kaempferol: abc mg/kg to xyz mg/kg.

The concentration range may be expanded by suitable changes of the experimental parameters, e.g. a different weighted portion of saffron or the accumulation of more NMR-transients.
These determinations are not based on the use of a database, and integrate evaluation not included in the ISO 3632/1,2 (e.g. SUDAN, Keampferol, cis crocins, free saccharides).
