Scope

This document specifies a method for the determination of components, bioadulterants and colorants in saffron (ground or filament), using quantitative proton nuclear magnetic resonance spectroscopy (1H-qNMR). If complying with the experimental parameters described below, this test procedure has been proven also for the detection of the following concentration ranges of the lipophilic colorant:
— SUDAN III: 0,14 -7,1 g/kg.
Furthermore, the molecules trans-crocins, cis-crocins, safranal, picrocrocin, free saccharides, kaempferol and crocetins can be determined simultaneously using this test procedure.
— trans-crocins: abc mg/kg to xyz mg/kg;
— cis-crocins: abc mg/kg to xyz mg/kg;
— safranal: abc mg/kg to xyz mg/kg;
— picrocrocin: abc mg/kg to xyz mg/kg;
— crocetins: abc mg/kg to xyz mg/kg;
— free saccharides: abc mg/kg to xyz mg/kg;
— kaempferol: abc mg/kg to xyz mg/kg.
The concentration range may be established by suitable changes of the investigated samples, e.g. a different geographical origins, different drying processes etc.
These determinations are not based on the use of a database, and evaluations not included in the ISO 3632-1 and ISO 3632-2 (e.g. colorants, kaempferol, cis-crocins, free saccharides).
