Scope

This document specifies a test procedure for the quantification of several ingredients and quality assurance parameters (carbohydrates, amino acids, organic acids, ethanol and HMF) in honey using quantitative proton nuclear magnetic resonance spectrometry (¹H-qNMR).
If complying with the experimental parameters described, a working range covering mass fractions (in honey) from under 50 mg/kg up to several hundred g/kg can be expected for the different analytes.
Trace ingredients in honey (e.g. agro-chemical residues) are beyond the scope of this method.
It is the intention of the project group to validate the proposed NMR method by a collaborative international study.
