The standard applies to professional machines, and for each of them the specific RESS safety requirements and construction features will be defined. Specific features of every family of machine, listed below, will be therefore clarified and the safety level to be achieved identified:
- pasteurizers;
- aging vats;
- cream cookers;
- batch freezers;
- combined machines;
- kettles;- coolers;
- milk-shake and/or slush machines;
- cream whipped machines;
- soft-serve machines.
