This document defines requirements for the installation and operation of kitchen ventilation systems in which solid fuel-fired kitchen appliances are also used. This includes the design, construction, and calculation of the ventilation equipment. Furthermore, requirements for technical safety, monitoring as well as ergonomic and hygienic aspects are covered.
This document applies in commercial kitchens.
This document does not apply to appliances that are directly connected to an exhaust system for their intended operation, e.g. solid fuel-fired pizza ovens.
This document does not apply to equipment intended for domestic kitchens.
