This European Standard describes the principles and basic methodology for the adoption, implementation and use of the hazard analysis critical control point (HACCP) system (7; 11) in the assessment and microbiological control of biocontamination in zones at risk, in order that these can be monitored in a reproducible way and appropriate protection measures can be selected. Examples of the reporting of classified zones at risk are given in annex A.
